Gas gives you the most accurate heat control, and is the only heat source that let's you keep heat on a pan while moving it around in open air

How is gas more accurate? I've never felt like perfect accuracy mattered in anything I've cooked, but how is eyeballing how big a flame is more accurate than being able to enter a desired temperature?

The flame can be jacked up or turned down instantly, rather than waiting for a burner to heat up or cool down. The level I cook at (I do it for a living) does require alot more precision of heat. Also have to consider the flexibility of being able to move the pan freely over the flame.

If you have an electric stove, turn it to high. Let it heat up. Now, turn it to about 1/3 or 1/2 temperature. You'll notice the coils stay hotter for a significantly longer period then if you tried this with gas.

Gas gives you immediate temperature regulation that electric stoves just can't.

Let’s not conflate electric and induction, though. Electric is not very good, gas is probably the best, but the flat I’m in at the moment has an induction hob, and it is pretty amazing. I’d say it is even more responsive than gas in terms of speed, but the issue it does have is that you can’t move the pan around much.

That's my big sticking point tbh, moving the pan. French cooking suites in high end kitchens are induction tops and loving rule, but there is always a gas stove right next to it.

Yeah, I was comparing gas to induction. I don't know of anyone who wouldn't agree that electric is just complete poo poo at everything.

My mom yelled at me for shaking the cast-iron skillet when stir-frying at her place on the induction stove. The gas stove was the one thing I liked about my last rental house, which was literally falling apart around/under me, but goddamn could I cook a nice steak.

I cook for a living and gas is hands down the superior option. That said, I personally don't care what the stove at my house is like, I never have to cook for hundreds of people over the course of several hours there. I usually eat pretty simply at home, and if I'm going to do a big meal for family or friends or whatever electric is no issue. I definitely have a habit of getting every pot and pan we have dirty though.

If I were to buy a house I'd definitely invest in a nice Viking range or something similar. Also professional hood vents, I have a bigger issue with smoking up the house when i sear steaks in cast iron than I do getting/controlling proper heat from electric. But while I'm renting washer/dryer, dishwasher, and shower water pressure are higher on my list of cares than the type of stove.

If I were a fancypants rich person I'd probably get a dual-fuel stove. Electric oven, gas cooktop. I'd say that's the only place electric does better since the element means more even heating than the gas strip down the middle.

I have that now and it's the best. But the place I'm moving to only has electric. It's the one thing I'm going to miss.
