I wasn't sure where to ask, but figured this might be the right place. I want to get my dad a new gas grill. The one he has right now only has 2 heat controls and is old as dirt. What's the best bang / buck for sub $1000 ? Is it just the Weber Genesis II e-310? Some of the reviews for that say it takes a long time to get up to temperature, which I'm not excited about for him.

I don't think you can go wrong with a gas grill around $1000 made by either Weber, Napoleon or Broil King. I bought my parents a Broil King Signet 90 back in 2007 and it's going strong on all original parts except the original AA battery that came with the igniter.

You can certainly go fancier and more expensive, but I got my dad the Dyna Glo 5 burner about 4 years ago. He loves it, uses it at least once a week since he retired, and it gets CRAZY HOT if you want it to. Less than $400 with the cover. If you want to go big, find some cast iron grill grates to fit it, but the ones it comes with are totally decent stainless, way heavier gauge than the default Weber grates. After a few months if being busy house hunting, house fixing, moving, and more fixing I finally get to fire up the smoker. This will be the first smoke I do that it's right off my porch and not down two flights of rickety stairs. I've been looking forward to this. Smoker isn't yet up to temp but here's a before picture. Just got rid of my cheap offset and got myself a cheap pellet smoker the other week to go along with my ProQ. Does anyone have any experience with Lumberjack pellets? Pellet choice is a bit limited here in Aus to either Traeger pellets or some overpriced half size bags but the guy I buy my wood/charcoal etc from is importing the lumberjack stuff which will be cheaper than my other options. Loving the simplicity of the pellet smoker, it's a waste of fuel to fire up my large ProQ just to cook for me and the wife so I haven't used it as much as I'd like. So far though I've done a small brisket, sausages, pulled lamb, beef ribs and a few pizza's through the Fumo and it's done a great job for little effort on my part.

I rarely see Costco carry lump, but they did have a big deal on briquettes. I’m too lazy to clear out ash like a hawk on my kamado style grill so I don’t usually buy them anymore.

I buy Maple Leaf briquettes which have nothing added to them but starch as a binder. I find they make as much or less ash than lump. They're also the cheapest charcoal for me here in Canada, $11.99 for an 8kg bag, regular price. Cheaper than the sale price of any other brand.

I smoked some sausages last night, and while they were quite tasty the casings were pretty tough. My kid had trouble biting through it, though little trouble peeling the casing off it and drowning it in ketchup. Anyway! Is this just a thing with smoked sausages? I took them to 160-165.

Some casings are straight up thicker than others, but you're going to want to grill/broil the sausages too. Gotta hit them with high heat to get them crispy, instead of chewy.
