It's one thing to say rare/medium/well done is the best, but being able to cook to the intended temperature is really what's most important. Poking the steak and feeling it's resistance is the easiest way to tell how done it is. If you need to remember what a particular cook should feel like, gently squeeze your hand between your thumb an index finger. Doing this with you pinky extended gives you the feel of a rare steak. With your ring and middle finger extended, medium rare. With your middle and index finger extended, medium. With your index finger and thumb extended, well done, a complete loss.
