You can use the strong house wall as a support, you build one less wall, and it moderates temperature shifts because of the extra thermal mass. You need less space, too.

One of the last pieces of my apartment living room puzzle is lighting. I have 4 recessed floods that are basically blinding (and, as such, are rarely used) and I’d like to put in some sort of fixture with lower-watt bulbs. My design inspiration is loosely Palm Springs MCM/Jet Age, but would need to be adapted for a room with 8-foot ceilings (lol). I’m trying but struggling to find some sort of small, maybe Sputnik-like, fixtures that would screw into the existing cans or maybe some sort of similarly-styled shade. Are there any terms or keywords I should be looking out for?

That way you can change the temp/brightness and/or add colorful mood lighting.

I have spots throughout the house but as you say they're too bright, but I knew this when I fitted them. The plan is twofold: 1. Progressively replace the normal GU10 LED bulbs with Ikea wireless colour-changing bulbs (underway) 2. Add a bunch of floor lamps on the same control system and only use the overheads when I really need powerful vision

Transitioning the cans to Hue is an easier way to go with my plan and a good fallback, I’d also be interested to know if there was a simple system/name for adapting recessed cans into low-profile mini-chandeliers.

May be that there is, but if not, most cans are designed to be installed from below, so you can remove them that way too (though very carefully so you don't damage your ceiling). At that point you've got a hole and some cable, with which you can do as you wish.
