Full Metal Panic has some elements of that after the first few episodes of high school comedy beats. The general military aesthetic is pretty good there.

I'm probably going to get back titles I've already seen or heard of, but... here goes nothing.

I want mecha war stories. Like Gundam (UC Gundam) where they're as fairly realistic as you can get with giant robots. Off the top of my head I can think of things like Gasaraki (great first half with incredible battle sequences, then the plot goes full-bore stupid), VOTOMs (ish) and probably everything Tomino ever did, like Brain Powerd and King Gainer and so on. ... I know some of those are less war stories, but go with it. I want gritty mecha/robot stuff, I've been watching too much Precure and Fighbird and need to feel stoic again.

there's also the 2007 Hakaba Kitaro which was a short run much more focused on horror than the current kid friendly one. and despite not sharing any main staff it has some aesthetic choices that remind me of Mononoke.

Mushi-shi is about a traveling dude that deals with a variety of weird spirits influencing peoples' lives. It's extremely cool and chill and good and I have never met someone who didn't like it.

Fullmetal Alchemist Brotherhood. It's shonen and it's quite lengthy(64 episodes, so about 30ish hours) but also of the type that doesn't have filler for the most part, and it's also an extremely good series, one of the best shonen out there. The dub is quite good as well. You could also give DBZ Kai a go, which cuts out most of the filler and still has a good 150ish episodes despite that.

As an alternate suggestion, you should watch Monster. It's 74 episodes of high-quality drama.

My Hero Academia is recent (Season 3 just wrapped up, so there's fair amount even if it's not One Piece levels), but it's popular and good.

Yu Yu Hakusho is by the same author as HxH, he made it before HxH, so if you liked HxH it's fun seeing all the ideas that got reused or tweaked between the two series. Plus it's just good shonen on its own.

Yu Yu Hakusho is by the same author as HxH and is basically a slightly more conventional version of it. (By which I mean, basically, it finishes its tournament arcs instead of just leaving them when it gets bored. :v: )

Fullmetal Alchemist: Brotherhood is a good choice for something that has that same balance of grim and hopeful.

Jojo's Bizarre Adventure is the gold standard for fights primarily resolved by creative thinking and the interplay of weird powers, so if you liked that aspect of HxH try it out. (And stick through Part I -- JJBA starts out as a fairly shameless Fist of the North Star imitator before it really defines its own identity. It's still good right from the start but it becomes so much better as it goes.)

Others have already Mentioned Yu Yu Hakusho. I'd also reccomend Soul Eater as it's got a great cast of characters, can be funny at times, and the world and music is just so stylish it gives it a really cool, unique vibe. Also has a bunch of cool fight scenes that switch up fighting styles frequently.

I wouldn’t really call it dark, but Towards the Terra is a compelling series if you like tragedies of circumstance. You want the TV version though, not the movie.

Also suggesting Kaiba. It looks acid-trippy at the start (and keeps the aesthetic throughout), but thematically, it goes into some dark philosophical places.
