We don't have a ton of expenses though. Student loans are paid off, no car payment, no large debt, etc. We literally pay rent/utilities, put a good chunk into savings, and the rest goes to whatever. We were looking at a gross monthly income just under 15k in SF, so yeah, I think $4k in rent would've been just fine.

Oh, I also heard The Reef pot shop on Capitol Hill is offering a 40% industry discount if you bring a pay stub.

Your commute via public transit from these neighborhoods is going to be 15-30 minutes, depending on how far you are from a main bus route. Anyone have a good recipe for a potato espuma? Curious as to the ratios and style of potato that gets best results. Edit: CDC I lived in the Tower at 801 when I lived in Seattle 17 years ago. They were awesome but a bit higher than your budget indicated. I recommend them if you want to live downtown in a high rise. Man, it has been tough lately at my place. I’m trying to work as much as I can, and pick up any shifts possible. But I’m playing walk the line with the head lady manager / waitress. There is only 4 of us. It just feels like a battle lately. Also it’s January and no one makes money.

This potentially means I'll lose one of my days off until it's fixed, and myself and the other main closer are going to be stuck also closing the dishpit in addition to the line on the days one of our departing dishwashers who closes three nights a week works, until he can be replaced. This has been an incredibly stressful start to the year and it won't let up. My tea habit and being too drat tired are probably the only things really keeping me from getting into the liquor. Or cracking. That's a distinct possibility too.

Guess who hosed up and burnt some meatloaves today? This girl. I got out an hour late today because I was doing extra prep, and making new ones. OT is good, but it was still a dumb mistake. Life goes on at least. Also woo being put back onto the hot foods prep position after like, at least 6 months of not doing it. The lady who's doing it normally is on family leave while her husband recovers from surgery, probably for a month or so. I did good for being out of practice at least.

I hate not doing prep because I get quietly OCD about it when it's not done the way I like even if it's otherwise fine. Onions aren't sliced the right thickness, mac & cheese bites aren't cut into perfect squares, dumb poo poo like that.

I just got done with an interview for a daytime prep position. It seems super chill and Im actually really excited about getting back in a kitchen again. I tried applying for other not kitchen jobs and wasent getting any bites at all so I reached a point where I had to take something for rent purposes. This job will let me not hate my life while I get some computer toucher certs and get my resume more solid. Also met a beautiful woman at the bar last night and got a date planned for Sunday. So thats nice. Cool thing about working in this industry is you know all the cool spots and look cool by knowing people at said cool spots.

In 2-3 more weeks they will be. On the upside, I lost a lot of weight. On the downside, I can pretty much only eat broth based soups and yogurt without my innards staging a mutiny.

It actually worked pretty well, and was SLIGHTLY safer since the fryer basket fit the pan like a glove. So it wasn't gonna tip over or anything, but it was still sketchy as gently caress and a boilover would be pretty nasty. And there's not really a super-safe way to remove a hot, greasy, full 3rd pan from a tight-fitting fryer basket. I did my best to keep my distance.

I once worked as a fry cook (100% french fries) at a baseball stadium and this guy would regularly drop like 20 hot dogs into my fryer when it got really busy and he ran out of steamed dogs. That's probably unsanitary right?

As Queen of the Fry Station, I literally just let out a very loud "GAAAH!" to that picture. Then a slighter less loud "YURGH!" after reading CdC's comment on the status of the oil and scrolling back up for a second, wincing glance. I'd get fired in a heartbeat if my fryer and its oil looked like that. In a desperate, in-the-weeds pinch, we've put pots on the flat top grill, because we only have a two-eye range in our tiny kitchen. Like, the new guy accidentally put gravy in the grits, now we gotta heat up some grits from the walkin, STAT, but the two eyes are already in use. Even in the circus that is my kitchen, I don't think we'd ever think to put pots in the fryer, holy WTF. Eeeech, and since we do our own dish and don't have a machine, that must be a blast, hand washing that filthy oil off the outside of those pots. Hope they pay the dish guys well. Hot dogs in my fryer, I'd be okay with that. While back, someone came in 2 minutes before closing and ordered something riding a corn tortilla. We cook our scratch-made corn tortillas on the fly, and my grill guy already cleaned the grill since we were slow and wanted to get out ASAP. Corn torts take forever to begin with, and the grill was cooling, so I said "just do it in a sauté on the range" and he said "wait, JD, I have an idea!" and threw it into the fryer. Tortilla came out great, and no pans were dirtied. I could've kissed him.
