I went on what I assumed would be a lengthy adventure yesterday to try to find free range chicken wings the day before the superbowl, but while they had none at all at Whole Foods 365 (only went because I had a coupon), they had plenty of them at Safeway. I did the buttermilk overnight soak thing, which works great. Last year I went with Crystal, this year it's Franks, but can anyone recommend something like 10% to 20% hotter but still distinctly Buffalo-tasting, for the hot sauce component? e. I'm baking, not frying, if that matters.

i'd just add whatever other hot sauce you have on hand until it's spicy enough. the buffalo flavor comes from the added butter.

apparently you only need 1.5 teaspoons of tapatio (3k scoville units) to add to franks' hot sauce (450) to raise it by 20%, which would be slightly higher than taco bell "fire sauce". i'm not sure i believe those numbers from wikipedia though.
