So, a bit of a weird quirk in Wisconsin law. There's Right to Know laws, or "what chemicals that a potentially dangerous could I be exposed to?" You know, acids, carcinogens, toxic chemicals, and the like. Lutefisk is exempt from this reporting under Wisconsin law .

The right to know what's in lutefisk, or the right to know when you've been exposed to lutefisk? Because if it's the latter, the notification would be unnecessary.

Lutefisk is so internet popular for being nose searingly ammonious that the can being labeled lutefisk is sufficient hazcom as far as I'm concerned. E. Food exemptions to hazcom are fun. Cured food is made with a health 3 salt that's left in measurable amounts. "Not" cured food is made with ingredients that turn into the toxic salt only this time you don't know how much is left over as easy as if you just added the dumb salt. zedprime fucked around with this message at 01:10 on Mar 1, 2019 |

Why even bother mentioning the word "drunk" when there's some kinda stupid accident involving a POS Russian? The best news I've heard recently is that the Russian population is in decline. Hopefully forever until there are none left.

I'm pretty sure I'd rather hit the ground fast and hard enough to make a Wile. E. Coyote style hole in the ground and haft to be dug up rather than survive that. Quality of life and all that.

If you do not use the nitrite salt, you get botulism cured meats which is nice and osha on its own. Here's a lovely blog which not only gives great instructions on how to make wonderful homemade bacon, but has a nice footnote explainer about nitrites, botulism, meat, etc: https://nwedible.com/you-can-make-bacon-at-home/ Here's a post complaining about the "no nitrites added" consumer labels, which always just use celery juice (in order not to kill you from botulism): http://ruhlman.com/2011/05/the-no-nitrites-added-hoax/ Lastly, just for botulism avoidance completeness, here's a nice graphical approach to learning how to can things without killing people: https://nwedible.com/how-not-to-die-from-botulism-what-home-canners-need-to-know-about-the-worlds-most-deadly-toxin/

Similarly with stuff like food grade citric acid etc. Ingredient hazcom seems kind of week compared to cleaning products for example even though it's generally people with similar amounts of education using both and with food there's a real issue with letting your guard down because hey, isn't this just getting swallowed later.
