I meant to take one but dinner ended up being a pile of cheese, butter, and charcuterie and I got distracted. Crumb was great, but the bottom got a tiny bit burnt because I forgot to put the oven rack back to the middle after making cassoulet last week.

Lunch today - a sweet potato mash, and turkey keema dupiaza cottage pie - British and Indian inspired fusion! Served with lemon and garlic butter tossed green beans, and crispy fried shallot.

Really, really happy with this - loads of rich, warm flavour coming through in the pie, but with some nice freshness in the beans to balance it all out. Would also be very easy to adapt this to a vegan or vegetarian meal.

this is a funny coincidence, my wife asked me to make lasagna this weekend so I checked the Food Lab book and made Kenji's lasagna bolognese. I'd never made bolognese sauce and holy gently caress is that a hell of a recipe. That sauce is so rich I could only eat one smallish piece.

Fried (purple) cauliflower and shallots over roasted cauliflower leaves, and Dino's vadai (bean fritters)


Green garlic and nigella naan


The vadai had an excellent flavor, but I'm afraid the texture was off - they took way over a minute to float. I think next time I'll use more beans and a bit more water so I can incorporate more air when blending.

Thank you for the help, Dino! I'm sorry I couldn't replace the soup with something more authentic; next time I'll plan for that ahead of time with my wife so it's part of the grocery list and I've copied a recipe into our manager.

Never crossed my mind that it would be an odd combination. To be fair, I eat a lot of carrots though.

Sides are always a bit of an afterthought for me in a weeknight meal. I usually just make whatever I make and then just toss in some steamed veggies.

I've invented some sort of pasta-less lasagna.



I'm on the keto diet, and I hungered for something like pizza but making cauliflower replacement crust seemed too much of a pain.

Bed of baby spinach, then some sauce, then pan fried chicken, then cheese, then bacon, then more sauce, then more, much more, cheese. Which I toasted
in the oven in an iron skillet. The sauce was made in that skillet, transferred to a bowl, and then back to the skillet. I just got that skillet so this is my first time
doing the thing I saw on TV by Gordon Ramsay where he puts a skillet in the oven to finish off food.

sauce reciple though I couldn't find sugar free canned
tomatos so I'm taking a bit of a risk with my carb budget.

To the sauce I added Chinese hot sauce, crushed szechuan peppercorns, and chili flakes and crushed dried hot peppers in my mortar and pestle.

It's really spicy.

Two things. You might could need to grind the batter finer, add a skosh more water, or increase the temp of the heat. Those perfect ball shapes have me thinking it's not enough water. Even the best Indian auntie can't get a smooth surface on those fuckers. But! They look really really good. :D

Just an FYI but "sugar-free" and "no sugar added" are two different things. Sugar is naturally occurring in tomatoes so you just want to look out for canned tomato products that list sugar or corn syrup as an ingredient.

I don't eat the whole thing in one sitting, I divide it into portions and have a bit of it each time. I tried it for the first time as some sort of weekend comfort food, I carefully measure out my calories, fats and carbs throughout the week.
