Pretty standard, followed this but added some pickle juice and some habanero hot sauce into the buttermilk to marinade it: https://www.allrecipes.com/recipe/220128/chef-johns-buttermilk-fried-chicken/ and left out the rosemary/thyme/sage as I don't really like them with fried chicken. I also cooked them in a wok, about 6-7 mins each side at a slightly higher temp, but I don't think that really affected the final product.

Awesome, didn't even know there was a thread on this topic. I've been watching all the Youtube cooking videos and while Babish is great and all I really like George, Alvin Caillan, J. Kenji Lopez-Alt and their obsession with burgers. In honor of that and my new purchase of a hand-cranked meat grinder for $20 at the local restaurant supply here's my second attempt at home-ground burgers. I must say, Kenji is right and sirloin/short rib is a great combo, and leaving the patty pretty loose is a good move too. (This is from the anti-food porn thread so of course if I take pics and they're okay like these I keep them but like I tried still photos to document making choux pastry and seriously it doesn't work without video, just looks like a tan mochi in a pot. Hence I can't personally contribute to the thread and while I save lots of pics from there because they're loving hilarious I don't see that kind of poo poo anywhere else.) oddhair posted:I never have pics for this thread, though I just don't photograph my non-photogenic poo poo cooking. This will likely change soon, though, Texas allows homemade pickles to be sold on the side of the road even, as long as they're cukes (which is a whole other ball of wax since they don't specify n the law but the Ag dept. is being dicks about this topic with regard to people selling pickled [anything_else_other_than_cukes] in the same fashion.

The Kaiyoken Burger from JD's Burgers. Not bad at all, would have been better if they'd used fresh jalapeno slices but I guess you can't have everything.
