The white/yellow part of a canker sore is a protein covering called fibrin, which is kinda like scar tissue. This knowledge has eluded me for a long time. As a kid, my parents didn't know. Years of asking Google has resulted in pages and pages helpfully informing me that canker sores have a white center. Like, poo poo, yes, I know that, what was it? Ugh.
