Line cook from the first meme is a white guy named Kevin or some poo poo, and he is from Indiana, Ohio, or the east edge of California. If he had more neck tattoos, he would be named Victor or Rigo, and be from Monterrey, Colombia, or Ukraine. An increasing number of establishments are doing away with the practice and simply paying stages for their shift. The fine dining world is still disgusting wrt to this though; some of the highest end restaurants might have anywhere up to HALF of their kitchen staff on any given night be unpaid interns and stages.
