Hello, I missed xiao long bao chat and would like to offer my opinion as a Taiwanese. DTF does not produce the best xaio long bao, but are often the most consistent. DTF is very varied in quality, and most DTFs outside of Taiwan are subpar compared to Taiwan. Even in Taipei, only the original branch of Xinyi has the really good XLB and the best quality (in fact, a lot of the dishes that are not XLB are really good). The Taipei 101 is mainland tourist hell and the quality of Taipei 101 is absolutely subpar compared to Xinyi. For better XLB, you have to know places in Taiwan.

DTF started when a dude who sold oil in Taipei brought over some Shanghainese chefs to make xiao long bao for a restaurant he was starting, so DTF's xiaolongbao are extremely Shanghainese. This is why a lot of more international Shanghainese people get grumpy when (a lot of) people wax on about how it's a Taiwanese food. Shanghai people get grumpy about a lot of dumb stuff, but this is one I feel is halfway legitimate. ntan1 here is literally the first Taiwanese person I've met who has not sworn by every DTF being the gold standard among all in the whole world. I was in fact eating out with a Taiwanese friend here in Shanghai last weekend who said she only goes to DTF in Shanghai for xiaolongbao cuz everywhere else is bad. I'm gonna bring them to another place to try and change their mind cuz they for some reason only tried ones even I think are sub-par like fu chun. again, I don't even think dtf is bad but he made a good point with "consistent". it's a lot like the starbucks of xiaolongbao where it's p overpriced and targeted at a certain set of people but it's definitely consistent in being a B+ every time. in chengdu they actually had a number of good taiwanese dishes I liked when I'd go to dtf for work dinners.
