Kenji's NY-style pizza dough with a 3 day cold ferment, pesto base, pickled sliced hot cherry peppers and shallots (hidden), mozz/jack cheese, pepperoni, sliced olives, topped with arugula after slicing. Was awesome.

Cooked sticky crispy fried eggplant last night. There's a Chinese joint near my work that does it so I've been trying to emulate it for a while and this is the closest I've got. Gonna try with fermented bean curd next time. poo poo picture with Instagram filter




Made Louisiana-ish style white beans with rice tonight. Used polish clobassi sausage and speck. This is another thing I've been tryibg to improve and I was stoked with it tonight.

A bit of thinly sliced beef from the Nijiya market, marinated in some hoisin, sesame oil, soy, sriracha, lime juice, chili powder and agave. Seared dry in a cast iron on one side then flipped over onto the plate. Some scallions, caramelized onions, and mushrooms dressed in a sesame oil, brown rice vinegar, and agave vinaigrette.

It's an emulsion! Roasted chiles, garlic, onion, plus cilantro, blend alone then drizzle neutral oil slowly. I was surprised with the texture!

You don't need to worry about drizzling or adding slowly or any of that. It seems to make a much more stable emulsion than a mayo or salad dressing. I just chuck everything in the blender and turn it on and I've never had a problem.

Was feeling super lazy last night and threw a bunch of tater tots in a cast iron skillet, dropped a 4 pound chicken on top with salt, pepper, and paprika, roasted the poo poo out of it, and topped the taters with truffle salt after draining them. Meat and potatoes (and spinach), folks.

Thank you for this - I’ve made this 8 or more times in the last couple of weeks including grilling them with soy instead of miso for the fourth and it’s been great every time

My take on a summer salad. Compressed watermelon, raw golden beats, strawberries, figs, toasted hazel nuts, feta cheese, and baby greens with a raspberry vinaigrette.

Vacuum sealed watermelon slices with raspberry vinegar and red wine vinegar and some salt. The vacuum process compresses the watermelon to give it a more solid mouth feel with tiny bit more concentrated flavor. It's also way more attractive looking.
