It’s pretty much this: https://lidiasitaly.com/recipes/italian-beef-sandwich/

I rubbed the roast with creole/Cajun seasoning before I marinated it and stuck it full of garlic cloves instead of the chopped garlic in the marinade. After slicing, I threw it in a pot with beef stock (better than bouillon + gelatin is my new favorite trick) and some Worcestershire sauce and some more oregano and the onions and peppers once I had sautéed them and let it all simmer together for a while.

Those last 2 both look awesome. Definitely want to do some kind of fish + pasta like that in the near future. Sounds like a great Summer dinner.

it's nice because it's ingredients we generally have around and you can easily poach from frozen so if you forget to plan something it's super simple to throw together

we just do cherry tomatoes sliced in half + 2 cloves of sliced garlic in a pan for about 6 minutes, deglaze with some white wine, add a cup of veg/whatever stock you got on hand, some frozen fish filets and some basil, cover and simmer for 20ish minutes, salt and pepper throughout

make pasta, throw on more fresh basil and some parm, bam, dinner

Toast and blend?

Fry in olive oil peanuts, garlic, and add arbol peppers at the end to not burn them.

Blend all with more oil, water, 2-3 clove sticks, raw garlic, lime juice, vinegar and salt to taste until creamy. Done.

I like it garlicky, hot, and tart, but adjust any of these however you like, I would keep heavy on the garlic though.

Habit, always throw some raw garlic on salsa when I add cooked, even when making guac, first I crush raw garlic on the mortar and pestle before throwing everything else in, I like it pungent.

BBQ Tandoori Chicken and some other kind of boneless chicken. Cooked on the Costco Louisiana Kamado Grill which is pretty awesome and legit once you learn how to manage the heat. This is the second time I cooked it and while I don't have it down 100% right I've been able to cook controlled at 400 degrees. Chicken almost fall off bone.

this looks like the sauce is missing cream and could use a more thorough blending. i would definitely still eat the hell out of it though. looks tasty as heck. try some chopped cilantro to garnish.
