It's a combination behind the appeal of LPs as easily digested imagery of a game without the attention or focus cost of gameplay, parasocial relationships for nerds who want to do D&D but don't/won't/can't do them IRL, and easily and cheaply produced for anyone with a good mic and access to a computer. Combine that with the community-ish good vibes of online fandoms and subcultures and they're gonna be popular in the era of toddlers raised on tablets.
