I really liked Ballroom, although the lack of real dance animation in the middle to later episodes (lots of still keyframes just panning and bobbing) was frustrating especially in contrast to the very pretty art style and character design. Worth watching but I just wish the studio had more time/budget/animators/whatever because fleshing out the dance scenes would have made it so much better.

the dancing wasn't really animated at the start either

I remember a few short dance scenes being everything I wanted and then becoming increasingly disappointed over the season's run. Hopefully a season 2 happens and gets more love because I feel like the source material deserves it.

Ergo Proxy has an excellent ending that delivers on basically all its themes.

Caligula was a terrible show that had an ending way better than it deserved.

Coffin Princess had a good ending but is two seasons long.

this is basically just a bunch of my favorite shows in disguise, but all the same:

Revolutionary Girl Utena (note: watch the movie after the TV ending. TV ending is good, movie ending is perfect)

From the New World / Shin Sekai Yori

Kemonozume

Mirai Nikki (manga ending. the show technically covers the manga ending in an OVA but it adds a really weird filler arc RIGHT at the end which isn't offensively bad or anything but screws up the pacing. also, probably the most controversial pick on this list, so start with one of the others)

it's probably people getting mad(and generally rightfully so) about the wedding scene. maybe the epilogue if they're not a fan of Lantern Jaw Yoko

can't imagine people not liking the absurdity of the entire final arc though. Which is further expanded upon in the movie, yes, though the stuff after the climax is the same.

Oh man, that's a manga I haven't thought about it a long time. Based on other manga you've liked and this choice I might recommend Sundome, though that's definitely not sonething for everyone. It sticks with me because the ending is frustrating, sad, and somewhat beautiful all in the same.

Also you listed other Urusawa mangas, so I'd definitely check out both Billy Bat and 20th/21st Century Boys.

ive read 90% of these manga, and also only read finished manga, so i feel pretty safe as pegging your tastes as seinen + miserable. im a bit too lazy to copy paste the 100 series that fit this description, so ill just tell you the author of freesia has a lot more stuff, so does the punpun author, the bokurano author, the akira author, the nausicaa author has a few more, the short cuts author has a ton more. then in a final act of laziness im just gonna link my mal, cause you'll find tons more like it in there if you just look at whatever cover seems dark enough

you should keep Attack on Titan in the back of your mind since it's very very close to finishing, maybe another 6-10 chapters, and is extremely good so far. Or wait for the anime to finish it off, though with the apparent change of studio I've got my fears they'll drop the ball at the finish line.

Some other finished series recommendations that I've read:

Qualia the Purple(if you enjoy strange sci-fi, this one's a hell of a ride in only 18 chapters)
Fullmetal Alchemist
Knights of Sidonia
Ressentiment
Helck
Ai-Ren
ERASED
Dorohedoro
Franken Fran(though the author did start making new chapters as a sort of sequel, the original ended years ago)
Kakukaku Shikajika / Blank Canvas: My So-Called Artist's Journey
Koe no Kotachi / A Silent Voice
Kumika no Mikaku / Kumika's Sense of Taste
Ookami Shounen wa Kyou mo Uso o Kasaneru / The boy who cried wolf tells another lie today
My Brother's Husband
Stravaganza: Queen in the Iron Mask

also, a oneshot, don't read the other chapters since they're extraneous at best, Hotel

I think my favorite anime I've ever watched is The Promised Neverland because of how well paced it was. It never felt like it slogged or lagged at any point and it had a very open ended yet satisfying conclusion to season 1. I'm looking for something that also tells a tight, well paced story (preferably psychological thriller/mystery/sci-fi/fantasy in that order, no mechs please) episode number doesn't really matter to me as long as it keeps the pacing consistent throughout.

Legend of Galactic Heroes might surprise you. It doesn't have a super blistering pace, but it has one half of a filler/recap episode in its entire 100+ episode run. Everything else is always keeping it clicking along, and the plot goes to places I didn't even imagine from the first 20 episodes. The best part is, if you watch Overture to a New War, you'll know instantly whether or not you're on board. It's a 90 minute movie that covers the first few episodes of the series in a much more interesting way.

It's a bit of an ask, I know, but when it comes to super well paced anime it's the first one that comes to mind for me, and the second is Hunter x Hunter. Mirai Nikki is also fun and in sort of the same vein.

e: oh duh, somehow I missed the preferences. Mirai Nikki then for sure, it's a thriller. Not like, a twisty turny sort of thriller but bombast after bombast with lots of gore in it.

Madoka Magica and Planet With are two that immediately come to mind for me. They're both at the sci-fi and fantasy end of things though.
