For me it was what looked like the tips of the feathers still in the skin, like it hadn't been de-feathered properly. I mean whatever, its a giant bird, you'll have to do a lower heat, longer cook and it probably REALLY needs to be basted but man it looked like little shards of feather quill were sticking out all over the best part of a bird; the skin. Also the way those guys were acting/the way that video was shot was giving me MTV sports(Dan Cortese?) mid-90's flashbacks, I'm pretty sure people have been cooking ostrich whole since they were discovered. A few dozen pages ago somebody posted that Turkish guy with the permanent beauty pageant girl smile cooking an ostrich and serving it on a giant plate of rice and it seemed way more appetizing.
