I didn't know about that substitution! This is great because it's turned cold here in New England and I have a lot of green tomatoes out there to deal with.

Nothing yet! We're visiting some relatives out of state and this is for a pot luck they're having on Saturday. Of course we now have 4 jars, so I think the wife and I are going to sample one tonight with some jalapeno Tostitos.

Yeah I'm in Mass and :same:. I usually make an extra batch of pasta sauce with it but we had a big crop this year and already have a bunch of jars. The process for that changes a bit with green tomatoes; you can't shock the skin off with a hot water bath, so you just have to peel 'em. Results are pretty much the same though. Surprisingly the sauce even still comes out red, though that may also have something to do with the tomato paste and paprika (optional) in the recipe I use.

Had a side of fajita vegetables, cheese, the aforementioned grilled pineapple, lime wedges, pico, and guac (the latter were store-bought because it's a weeknight and we were lazy).

Salsa report: it's good! We opened a jar early to taste. Nice and tangy. Has a very tiny bit if spice that builds slowly, but that might just be the jalapeno chips. I think my only nitpick is it the recipe calls for a little more human than I think it needs.

50/50 corn/flour tortilla, then an avocado mushed with a bit of yogurt, lime juice, salt, pepper, and cilantro, then flank cut carne asada, little bit of shredded romaine, bunch of pico de gallo, topped with lime juice and Maldon's.

That looks good!

So no one else has to google it and read the multi page article :

Pat dry chicken (thighs with skin on preferred)
Season with fresh black pepper and Lawry’s seasoned salt
Preheat oil in large cast iron pot to 390 degrees
Dip chicken in flour on all sides
In pan, skin side down, 5 minutes
Flip chicken, lid on, turn down heat, 15 minutes
lid off, flip chicken, 5 minutes.

Move to wire rack, rest 5 minutes.
