I made some sodium citrate myself out of citric acid and baking soda, because I didn't want to wait for Amazon to ship it. It turned my preexisting, poor-melting cheese dip green and weird tasting I probably used too much

You can also use citric and malic acid to add acidity to juices like grapefruit and orange. It gives them the same acidity as lemon or lime juice so you can use them in a cocktail like a Daiquiri with the exact same proportions but a different flavor.
