I disagree with him about using salted butter for baking over unsalted. Not in principle so much, but the level of salt is wildly inconsistent across brands so using unsalted butter is going to be a lot more consistent.

Yeah, if it's a one off thing you're making it's fine, but if you're baking something repeatedly you're much better off using unsalted butter and adding salt in a consistent way.

Also blanching doesn’t involve any soaking in water, you just shock them so they stop cooking and take them out. It’s like 20 seconds. And saying a brine “dilutes” the taste of meat by adding the flavor of the brine is a weird way of stating the obvious.
