Also for closer-to-the-equator bean dishes, either cumin/chili powder/paprika or cumin/turmeric/coriander will be your central spices for curries, stews, shakshuka, tacos, and tostadas

plinkey sent me some kimchi ramen but I don't like instant ramen noodles much so I used udon and I made the broth more flavorful with fried beef trimmings, adding kimchi/juices, gochujang, and anchovy paste, and stuff but the recipe for kimchi stew on bon appétit is really good, I think if you cut back on the gochujang and added some beef flavor and fat from trimmings like I do, the broth would be pretty similar also msg

To blanch diced peppers, drop them into boiling water for a short time (a minute), strain out the hot water and then rinse them with cold water to stop the cooking process. Then you can pop them into a bag in the freezer and use them in your beans when you like.
