They're easy as hell to make. Simply screw 4 wide planks together into a rectangle, lay cardboard on the grass to kill it, and fill with soil. Mixing in some manure if you can get it is good. Keep it narrow enough that it's easy to weed without reaching too far over.

If you live somewhere very wet (like western moorland) then blight may be a problem, and you will want early and resistant varieties. But otherwise yes, potatoes are easy. On the other hand they are so cheap and easy to buy, it may not be your best use of space. If you like Jerusalem artichokes, they are the very easiest thing to grow, and hard to find in shops. Garden organic has advice pages.

Peas and runner beans give you the best bang for your buck, in terms of just how much better they are fresh from the garden compared to shop-bought, IMO. They're like a completely different food. When I was a kid we used to grow peas in the back garden and I don't think any of them ever made it onto a plate, we'd just eat them straight off the plant.

Completely anecdotal observation: been out for a run every day since quarantine started. People have been pretty good until tonight, when there was probably 3x as many people out, and most pretence of distancing was abandoned. Noticeably more traffic on the road too. 20c and sunny at the weekend is going to break people.
