cooked rice has a massive surface area that's why bacteria will breed in it quicker than other foods, with exponential growth it can go from a manageable bacteria level to deadly within an hour and there's no way to detect it by taste or smell because it happens so quickly, I'll eat any other old food but don't gently caress with rice

It's absolutely fine to cook rice and leave it cool on a plate for next day use, as long as it's covered well. Been doing it all my life. Never once made me unwell. It's no different than doing it with potatoes or pasta etc. Maybe things are different if you live in a very hot country.

Covering it doesn’t matter, the spores are already present in the rice and not destroyed by cooking, and like that other goon said, the high surface area lets bacteria multiply quickly once they’re active. Just because you haven’t gotten sick (yet) doesn’t mean you’re not rolling the dice when you do that.

Thanks for the dark soy sauce tips! Wife also bought fermented tofu, so made cabbage with it. Kind of mediocre because I substitute black peppercorns for sichuan, and red pepper flake for actual chiles. My 6 year old is has to eat (well taste it anyway) it so cannot go real spicy.

i've been eating 4-5 day old rice for years but now im worried I'm basically a looney tunes character who walked off a cliff and didn't fall till they looked down, but where I didn't know old rice could kill me so it had no effect

tbh if WarpedNaba doesnt have a ricecooker, a microwave or a working stove we cant be sure he has a fridge. We cant be sure he isn't eating raw chicken off the floor either. WarpedNaba do you have a fridge? Do you live in a shack out in the woods made from recycled bird nests and mud? Is this you?
