I had those old el paso enchiladas for dinner last night because I was lazy and drunk. It's very hard to get the spices and chillis required for good, authentic mexican food in the UK. If I want to make proper enchiladas I have to source the ingredients online and a fairly hefty cost. Some markets do sell chipotle and ancho chillis but you're paying a lot for very little.
