While camping I have *never* burn most of the buns I was toasting and had to use bread for some of the burgers and then been too tired to toast it. /s

The sweet hot pickle is the finishing touch, totally changes the burger.

This was a journey. I'm finally cranking out a better product than my favourite independent burger joint (Hoodburger, Northbridge WA). My partner is getting pretty sick of me taking photos of hamburgers.

I holiday burged. 80/20 beef, mozz and ched with bacon in between on a toastified and butterized bun.



Edit: Thats probably a bug that landed on the cheese. Still 10/10.

Lettuce, tomato, onion, mustard, bacon, cheese, and these little sweet pickled chilis since I can't find good jalapeņos here. Used 1/2 lb of ground beef to make three smashed patties. Could've used more cheese and a non-grainy mustard (and spicier peppers, I should've used the raw thai chilis I have instead), but this was still a fine burger.

It was homemade.


And this guy nailed the recipe. It's the first thing that came up when I googled bacon jam a few days ago. I've made other recipes in the past, but so infrequently that I never can remember which recipes I've used. This one was good, but I ended up cooking it longer than it says.

It's gravy with caramel colouring and crisp-fried onions on top. Inside the burger is pickled sliced beets, ketchup, beef patty, remulade, pickled sliced cucumbers.
