It's not so much squeamishness as it is a texture thing. A lot of the offal has a perfectly fine taste for use when making stock or stews, but you bite into it and eurgh, it just doesn't feel like something you should be chewing on.

That's literally the opposite of anti-food porn. It's loaded with technique, loaded with good flavor combinations, and is just an impressive dish all around. That anchovy and herbs sauce is loving aspirational. Now i need some bricks I can wrap in foil.

It’s just chimichurri. Not something you want to eat every day I guess, but it’s a great condiment. I usually make some when I grill steaks.

I've tried the gland/node chorizo before and it's pretty dismal. When cooked about 60-75% of the volume turns to pure grease. The rest has a cat food-like texture and tastes like having a bloody nose. Good chroizo isn't expensive, just buy that.

The pork nodes brand sausage (cacique) makes a vegetarian version of chorizo with soy protein and while greasy as hell, it's delicious and cheap. Hearts and skin are the best parts of the chicken. Some organs taste good some don't, up to preference. My experience is kidneys, brains, lungs, and mammal livers mostly suck.
