They have iron trapezoids buried in the ground with either black powder or compressed air valves at the bottom. You're not going to fill the trapezoids up with rocks, its mostly sand and light bits and dirt.

This video, however, where he goes to a guys mill to get live oak is kind of insane. Link is timestamped to the machinery, but the whole series is worth a watch.
