I hope the OP is still open to suggestions, because I just finished Chip&Ironicus's MGSV let's play and it has to be one of the best I've ever seen. I don't think I've watched an LP to completion for about 5 years, but the level of effort gone into understanding the ins and outs of every mission and the complexity of the gameplay makes it really compelling.

Fall of Civilizations is among the vanishingly small number of good history creators on Youtube. He did 10 episodes in audio form and is currently doing video versions of them now. The video stuff is mostly stock footage, but is well put-together and adds worthwhile context. My personal favorite in the series so far is the Summerians episode, because it really emphasizes just how insanely long ago all of this was happening. While it's not quite to the level of effort as the MGSV LP, I recommend checking out supergreatfriend if you haven't, his LPs are almost always very enjoyable and complete and he's done some LPs of games that really don't get any love otherwise.

So im watching more and more Basics with Babish because i'm digging deeper into cooking for myself and im just now realizing he may not be the greatest person to actually learn to cook from. "Today we're covering salads! Here is how to make your own Buttermilk ranch dressing!" Thats cool man, but I don't really have the kind of time to make my own dressing "Lets talk pasta. Here is how to make your own noodles!" Uhh...I thought you were going to show us various dishes? Making my own pasta seems a lot more advanced. Plus I can't afford what ever they hell your using to cut pasta. "Lets make tacos! Here is how to make your own torlias" Dude, Tortias are like...20 a pack for 5 bucks. Im not that broke.

Probably fine to just skip those bits at least! It's kind of a done thing I guess. Like no one in their right mind would ever make their own puff pastry but you'd probably have people complaining if you didn't do it every so often. Even though they aren't going to loving do it either because it's hard, messy, takes tons of time and is utterly pointless.

Yeah, I kinda binged on Binging with Babish for a little while and then realized I wasn't going to follow any of those recipes, and I have made my own stock, tortillas, pasta etc. before. That's why I've gone with Food Wishes (chef John) or Adam Ragusea - they have a strong undercurrent of "ain't nobody got time for that" to their recipes unless the whole point of the recipe is that homemade aspect. I've actually cooked stuff based on their videos, and Food Wishes was great for my blind spot of baking, because he does a good job showing and telling what your dough should look and feel like to have the right consistency.

You can always pick and choose what parts of his recipe you want. I’m probably gonna make that Bolognese recipe this weekend but definitely not my own pasta, it will be just fine with a good dry pasta

The Bolognese recipe he just did looks interesting, nothing like how I've done it, like having cream in, and I've no idea if it's more or less authentic. His Carbonara apparently is, I watched a reaction vid by an Italian chef who took little issue with it, although there was also an Americanised version he didn't submit himself to. Plus a lot of the Binging recipes are simple or comprised of simple components, like the Parks and Rec breakfast recently which teaches two types of hash brown and chicken fried steak, among other things.

The Basics series has basically become "recipes not from some piece of media I want to do" and hasn't been basic cooking advice for a while. Plus Babish in general has fallen into the Food TV trap of "everything has to be made meticulously from scratch or it's not Real Cooking".

Cooking content has always been very aspirational in nature, more than educational. Wouldn't it be great to have enough time to just idle away the hours in the kitchen, making your own pasta, bread, pastry, pie crusts, pizza bases or whatever? To spend hours and hours lovingly making something from scratch? Possibly with a lovinglty cut bit of meat you chose from the local butcher down the cobblestone road that's seemingly always draped in sunlight? Of course in reality no-one actually has that time so they'll have to make some substitutes. I think generally he's good with that. Definitely better than some. Again, people really get antsy when you DON'T do all these things. I remember when Delia Smith, who is as legendary a name in UK TV cookery as it gets, made a series a while back where she *shock* used ingredients that came out of tins and were even *gasp* ready-made.
