Guizhou pickled mustard greens. Like everything that's got the holy ingredients of garlic, ginger, shaoxing, sugar, soy sauce, black vinegar, it's insanely flavourful for how little goes in, plus it's pretty dang healthy (I used mustard oil instead of lard.) Also MSG ftw.

I only have excellent ideas
We recently bought a house and although most of it needed a lot of work and renovation, it also came with a surprisingly fancy grill. This week is the first time we've been up to work on it when it wasn't snowing heavily so I've been going a little crazy.


I grilled a bunch of asparagus for lunch with a balsamic and smoked onion mustard sauce.


And for dinner, a bunch of ramps, some pineapple, and two flavors of tofu-- maple and mole for my wife who doesn't like spicy stuff, habanero for me. Not pictured, a bunch of onion and serrano peppers I also grilled.


And here's all that stuff as a taco.

That's a high quality avatar right there.
Made a few tacos for lunch. Protein is crumbled tofu, diced mushrooms, scallions, and a load of Mexican spices. After the tofu started to get a fair bit of browning on it I squeezed in some tomato paste, gluten free flour, and water to make the mixture a little saucy. Came out very good. Would make again.

I only have excellent ideas
Normally I like that vegan cooking naturally leads to healthier cooking, but yesterday I found out that certain flavors of Doritos are vegan and knew I had to do something disgusting with that knowledge.

So here you go, Doritos Locos fried tofu. Very tasty in a taco with pickled cabbage and some diced onion, great if you are desperate to remember what heartburn is like. I fry things the old fashioned way very very rarely but I think these were worth it just to try out.

Utterly brutal.

I keep making dumplings in big batches and freezing them for later and every single time it kills my back to roll out all the dough and fold it and it never stops me I just whine about it and question if I should get a higher table or something. Cannot tell at all if it's fun or miserable but it isn't neither.

I don't know much about Indian food other than that I love it and cook a lot of dals. How do I dive deeper? Are there some like seminal blogs or cook books that you guys know? I'm looking for heavy dal dishes, spicy, obviously vegan (which I think is North Indian). I have access to many indian grocers so ingredient finding shouldn't be a deep problem.

Vegan food is most common in South Indian cooking but it can be found all over India. North India often uses ghee and/or cream.

You can generally substitute the ghee for oil, or if it's using both just forgo the ghee. I am north indian and growing up my parents barely cooked with ghee.

Yes, definitely. But if you're willing to substitute things, then pretty much any food can be vegan!

On the subject of Indian food and veganizing recipes that use ghee etc, I love this dum aloo recipe but it uses ghee and also calls for soaking cashews in milk and then making that into a purée.

It says you can use water instead of milk — is that the best play, or is there something better to use? Also, since I’ve had a devil of a time finding cashews that isn’t a huge bag, is there something good to substitute in place of the cashew purée?

I've never tried, but I imagine that natural (peeled) almonds might do the trick. I can't think of any other nut that doesn't have a distinct flavour.

In that particular recipe, though, I suppose you could use vegan yoghourt or sour cream, or coconut cream as a substitute. You might need to adjust the thickness in that case, but it shouldn't be hard.

Soaked cashews blended with about a cup of cilantro, a glug of olive oil (about a tablespoon), a splash of vinegar (about 1/2 Tbsp, maybe?) and some salt and/or a bit of onion and a clove of garlic makes an absolutely killer sauce for tacos or beans. It's infinitely variable, you just use whatever amounts you want.

Cover it with a thin layer of olive oil to extend it's lifespan, but i think it'll start tasting funky and sour after a few weeks. Never tried freezing it...

I'm interested in this too. When I grill out it's always vegetables and fruit, tortillas. Then I eat tacos. I like to grill onions for my tacos too. I put asian sweet potatoes on the grill a lot and eat them like dessert.

You can grill tofu up pretty nice but it's finnicky. I just got a nice grill and I'm also curious about what I can do on it. I've been grilling a lot of corn and I want to do something fancy with eggplant in the near future. Oh if you like making sauces and salsas and have an electric oven, they're also a nice way to char peppers. Ramp season might be over now but about a month ago I had a lot of fun grilling ramps and just eating them as a side. Ditto asparagus.

For grilling tofu I have to do a lot of pre-prep in the form of squeezing it out & freezing it to get an incredibly firm texture. I sometimes end up using one of those grill skillets with the holes in it, which begs the question "Why am I not just cooking this indoors on my stove?"

Smoked tofu is excellent! You can buy cold smoked tofu from the shops around here (it's good) but I had some my friend had smoked themselves and it was delicious.

Thanks for all the replies! I like burgers and skewers fine too, but I think I have a pretty solid idea of how that goes and wondered what other exciting things you could put on a metal grid above a fire. Potatoes cooked in the embers and grilled corn are other basic ones that I usually end up doing. That grilled cabbage looks really good. I was also thinking of trying the jackfruit/seitan ribs someone posted a while back, although the recipe wants you to finish it in the oven which takes something away from the grill idea for me.

If I'm being honest with myself, when I grill tofu it's because I like standing around outside and because having a grill is still novel to me. I think it tastes great and has a really great texture but it is a fair bit of extra work.

I also, you know, keep hearing really great stuff about grilled lettuce wedges as a salad base. I'll try that tonight and report back.

You have almost convinced me, the #1 lettuce hater, to give this a shot. Don't have a grill so that is an obstacle.

It's a lot like good roasted brussels sprouts - the grilled pieces get crispy and identifiably "grilled" tasting. They taste kind of smoky, and I think you're probably right that it's the caramelized sugars. The rest still tastes like lettuce, and if you don't grill it too much then the inside is still crisp. With just a little olive oil and salt you can end up with a pretty awesome salad in a whole (or half, which is how I've done it) head of lettuce.

Ok, I grilled some romaine hearts and they were wonderful. I just halved them, brushed the flat side with oil and herbs, grilled for a few minutes on each side, then topped them with cherry tomatoes, sliced radish, and lime juice. Very very fast, very simple, very tasty.
