If you run full speed, then put your feet directly under your weight and jump, you'll get up in the air- but you'll also preserve all of the forward momentum you had (think the long jump in track and field). If you get your feet out in front of you when you plant for your jump, then you stop that forward momentum and actually convert some of it into additional vertical height. The term for it is "blocking" and it works on solid ground too but I imagine the gymnastics floor amplifies the effect and lets you be even more aggressive with it
