Also kind of like how pictures of people in their 30s and 40s from, say, pre-1980s everyone seems to look really rugged. I believe this has been actually explained easily by a number of key factors: 1.) diet (e.g. red meat every day make you strong!) 2.) habits (e.g. smoking, alcohol) 3.) occupation (e.g. more factory/blue collar work or manual labor) As the 1st world evolved, these became improved or changed to be kinder to the body.

In addition to folks not smoking, I think people are more conscious of sun exposure these days, as that prematurely ages the hell out of you. My grandfather didn't smoke but he was an arborist and he died of a heart attack at 55 while getting out of his car. It was a couple of decades before I was born, but from the pictures I've seen right before he died he looked worse than my cigarette-smoking, COPD-having dad does now at 81. My grandmother died at 78 and she looked a few years older than my wife's grandmother, who died at 95. poo poo's weird.

Of all the 50 year old+ actors around now who still look fairly youthful, you've picked the one who does actually smoke as an example. The answer to why actors well into their 50s don't have wrinkles is a combo of sun screen, moisturiser and botox, mostly. But yeah also smoking and alcoholism will age you like nobody's business.
