For Canadiana I thought about doing one of Ben Franklin pointing on a map at the Arctic north of Alaska, but I couldn't find the pieces to put it together. There's a robot Ben Franklin in season 11 and also his appearance in "Bart Gets an F" but they're not great for the purpose and the maps wore me out.

I'd say save the best episodes for later, show them something like Bart the Daredevil, an episode that's mostly normal but has the iconic gorge scene at the end. Bart the Murderer and Radio Bart in S3 are also good starter eps.
