Honestly, I haven't noticed much of a difference. I tend to brew it extra strong, however.

I might try to do a taste-test between the two, I'm curious now if there's a distinct difference.


My favorite bit is that I just hose it off. Great if I'm camping, I don't wanna carry around a filter.

The only real difference with using the disc is you will get a tiny bit of residue in the cup. If you dont swirl it a bit near the end it can be an odd taste.

Got an odd issue with my Rancillio Silvia that I'm not sure how to diagnose. No matter how fine I grind, it'll gush out and I get 50g+ of liquid out in about 15 seconds, I've gone from coarse (for espresso) down to turkish and it's always the same. The puck is also a bit wet when I remove the portafilter, there's no standing water on top of it but it's wetter than it should be and the surface of the coffee bed looks like it's been washed around. There are no tell-tale signs of channelling either. The solenoid dumps water when I backflush, although possibly not as aggressively as it used to. It takes a couple of pressure build-up and release cycles before water starts to come through.

This is an old machine, maybe 10+ years that I've been using 3-4 days a week. It wasn't a gradual degradation to this point but something it just started doing one day. It did it for a couple weeks and I was trying to diagnose it then it randomly fixed itself and worked normally for a couple more weeks. Now it's doing it again.

What I've done so far:
Tried a few different beans; double checked and ruled out the grinder; several cycles of backflushing with Cafiza,; one descale cycle with some delonghi branded descaling solution; pulled out, dismantled and cleaned the solenoid valve; opened the top to look for anything noticeably out of place but it looks normal.

Doing a quick googling of your problem pointed me here with a discussion of something similar.

The idea that came up with to fix it was disassembling and cleaning/adjusting the OPV(over pressure valve) to make sure it is sealing properly and free of scale.

i don’t know for sure if this is your issue but before you do anything else, replace the group head gasket

I would love a gooseneck. I brought it up with the wife and we'll float the idea for a christmas gift this year.

I've been using a knockoff v60 so it'll be super nice to have more fine control.

No matter what I do with my Chemex, I always get a bunch of grounds under the folded flap in the filter and it always collapses into the pouring/ air channel. I guess I’m not hardcore enough.

I had a thought while I was typing my post out, when I descale I never backflush with the descaler. I'm going to do another thorough descale at the weekend and see if that sorts it, if not I'll take a look at the OPV. It's a really old model of Silvia and in theory it should be before they added the adjustable OPV but when I opened it up, it looks identical to the adjustable ones I've seen in videos, with a locking nut and an adjustment nut.

I think Hoffman's video mentions some people use a chopstick to keep the filter from forming a seal in there. Not sure about grounds escaping, but maybe something keeping the filter from collapsing will reduce movement in general?

Hmm. The thing is that it’s pretty easy to grind fine enough that the grinds under compression are watertight. If you put turkish grinds in your espresso machine, nothing should flow through, no matter what the pressure valve is doing, higher pressure just means the grounds get more tightly compressed and still nothing gets through, so if you’re getting gushers even though the coffee is very fine that suggests to me that the problem is in the basket or grouphead. Is one of the portafilter lugs damaged? How about the shower screen and distributor? A video of the problem might be helpful too.

I use a chopstick to keep the filter from collapsing, or sometimes the handle of a small spoon.

Hmm, I've never had grounds move under the flap. Are you rinsing the filter out while it's in the Chemex and pouring the water out while the filter is still in it? I found that this has always sealed the filter together and to the glass pretty nicely.

I love it! If your space allows I'd get a counter height one though. I got this one shorter due to the window, but it's still great. Sturdy enough to pull lever shots. Everything used to be a pile, now it's all in its place.

This. Also check the amount of coffee you're using; I ended up going with 21g in a double portafilter. When you backflush, does it work (ruling out issues with the 3 way valve).

Now i think he’s great. Also as someone who owns both a decent and the 6.75 plastic v60, i appreciate that he makes content covering the whole range of coffee gear. It’s nice to know what’s out there across the whole spectrum even if not all of it appeals to me. I don’t have time for channels that exclusively review $5000 commercial grinders in excruciating detail, nor the ones that exclusively review whatever $5 crap gadget a chinese factory has shat out that week

Having a normal Wednesday trying to convince the coffee thread it's actually okay to insert myself into a discussion about Chemex brewing so I can jokingly wish violence on someone because of how they sound and look.
