Can I offer a suggestion for pieroges?
As they're finishing, sprinkle with bleu cheese crumbles just enough so that the heat is enough to soften the cheese without goopifying it. Bacon and bleu is excellent and in this dish I think would work perfectly, unless one or more are you are adverse.

This sounds like a good idea, Imma do half with, half without

The days are still warm so the thermostat is set to cool the house during the day. Then it’s like 7:30pm and the temp has dropped 10 degrees and suddenly you realize your toes are cold and you go to the thermostat and it’s like 5 degrees under target temp so you get to make the switch over. This moment is the best thing about fall.

My house is cold as hell between summer and winter and it sucks but it's also cool because I can wear layers and I got some really cool layers to wear

Doin a charcuterie platter for dinner for Mrs Beef and I tonight

Kerrygold Blarney Castle cheese,
La bonne vie brie
sour cherry and fig jam with several types of nice crackers
An 'antipasto' three pack that has, salami, prosciutto, and one other sliced meat in that I can't remember and I'm not going down to check e: coppa
various different types of olives and peppers
some fruit
a small loaf of a little rustic bread
some great balsamic and excellent olive oil that we just keep on hand
A really neat hot-house grown heirloom tomato they had
ee: oh even some little ham, turkey, spinach, and cheese tortilla rollups just for a filler. I was gonna have them for lunch but thought naw. They're tacky but they're alright. On they'll go I think.

The whole spread.

We used to do this a lot more but just fell out of practice, but just make a whole meal/evening out of just pickin' off the tray as we watch the news and some tv and hang out. I'm lookin' forward to a nice evening. :)
