GGG has definitely grown on me a lot. I need to cancel my cable though, as at this point we only use it for live sports and FN, which we can just stream for a fraction of the price.

If you get biscuits and gravy with calabrian chilis or paneer with fresnos, it's pretty easy to go "yeah, that's flay" for sure. i also need to cancel my cable, but discovery + at $5 a month through prime is a pretty solid way to get food network programming, though they don't have all of it for all of the shows, which is weird. it's been fun revisiting bourdain's "a cook's tour" series from the turn of the century.

Anyway, its not for everybody, but me and the family like em and have been fans for a bit. Just 2 bros who cook and make cocktails (all poorly and sometimes competently) and talk about whatever and everything.

one of my lasting memories of the fieri restaraunt review is the garbage can nachos. i hope he has a cat named garbage can :kimchi:

also, i signed up for "PBS living" on Amazon for $1.99 cuz there was a local thing i wanted to see, but they've got a shitload of stuff like ATK and Julia Child and Mind of a Chef and Ming Tsai and whatnot. I think I'll keep it around at that price.

He is extremely goofy and enthusiastic. Not the most technically talented, but fun to watch anyway and his energy is infectious.

My wife has made a couple of his desserts and they've come out okay-to-good. He definitely likes things sweet. He can miss me with his savory stuff, though.

Absolutely, it's a bible. Every couple years I buy a new one and pass the older one to a friend or family member.

Their recipes are pretty much a guarantee. If you've never made lasagna or molasses cookies or whatever, but you're assigned it for the potluck or you just feel like making it yourself, their recipe will be successful. Sometimes the methods are innovative rather than traditional, but the outcome is either the same but easier, or better.

As you make the recipe more often, you can modify it. A lot of the time there's one step you can cut out that's 30% of the labor but only 5% of the flavor, or you can come up with a way to use fewer dishes. The only thing I would say in general is you can/should usually feel free to add more seasoning to taste. However, for chocolate sweets, cut back on the espresso powder unless you want it to be obvious.

Yep, echoing everything Anne Whateley said. It's an excellent compendium that we use all the time. I personally lean on the (excellent) app due to its search feature instead of having to manually hunt down a recipe in the enormous book, but that requires an ATK membership and if you're just looking for recipe access you absolutely cannot go wrong with the surprisingly reasonably-priced cookbook.

The biggest problem with ATK books is that they all recycle the same recipes so if you buy more than one you're probably going to be mad at them.

I use the vegetarian one they put out quite a lot - pairing it with Mark Bittman's How to Cook Everything Vegetarian is very sizeable reference for vegetarian dishes.

I have the ATK cookie book and my main beef with their recipes is that they’re insanely fiddly while also rarely producing more than like 18 cookies. For most of the recipes I could find one online that made twice as much of the same thing without requiring me to separate eggs.

That's always a trade off with baking. "The most fudgy xxxx ever!" Will use yolks or something that takes a bit more effort. You're ultimately combining fat, sugar, and starches so most recipes work regardless.
