I'd recommend Ryza 1 as a better starting point. Neither of them are topping my list of ateliers, but they might top yours, from what I know of your tastes

There's a bunch of games yes, but Trails in the Sky is the first one and thus requires no outside knowledge to start with! If you do like them and just play them in order you'll have no problems.

my all time fave video game is atelier ayesha, but I think the game that best expresses what makes atelier so special to me is atelier rorona.

I finally played AI after it popped up on game pass and beat it a few days ago, and the godawful song from the ending has been stuck in my head since. I still can't decide if I like the game or hate it.
