Did Joshua Weissman's recipe along with the homemade stock we had made from something like 9lbs of beef knuckle bones from the Asian supermarket, so it had a ton of gelatin. This roast beef came out way better than expected. Wasn’t sure how tender a bottom round would come out at medium rare, but it was actually really tender and juicy. Forgot the aus jus for the picture. Will definitely be making French dips with the leftovers.

Just go til you think it looks right. It's like browning onions, all recipes lie about it.
