I can't speak for Zak, but one can most definitely get suck in Maniac Mansion. I was playing un updated version of this a few years ago and entered a Dead Man Walking scenario. I knew that that bullshit could happen in things like King's Quest V, but I also honestly thought that Lucas Arts never did that. I can't remember the details now, but I specifically looked up a list of DMW scenarios in that game, and there it was in black and white.

IIRC you could get stuck in some versions of Monkey Island by doing dumb poo poo like using a vending machine hundreds of times to waste all your money, but patches or re-releases fixed those cases

there's a difference between a game where you might get stuck or stonewalled by accident and the sierra-style 'we expect you to be making saves constantly, dying frequently, and rolling back to the start of the game always being an option'

some things were just kind of accepted, especially coming off of most people's experience with games still being the arcade where losing meant paying more money to continue and most games were built to sometimes kick you in the crotch to get you to drop a few more quarters

I bounced off of 3 hard when it was new. Having finally played through all of it it's a solid third place in the Trilogy.

There are hints that a new Monkey Island is in the works to be released this year, but I'll probably never get around to 4 or the Tales game
