From what I've understood, there's no definite answer as to whether insects are sentient or not (as said, how do you measure that?) but considering the neural complexity of insects there's a possibility of them being so, and as such it might not be worth taking the risk with insect-based food. With fungus, the same argument is harder to make because the type of sentience would need to be very unusual/unlike what we usually consider. Obviously that doesn't mean that fungal colonies aren't sentient, just that statistically insects could be considered to have a higher likelihood for that.

If there was sentience it would probably be in the mycelial network, not the fruiting bodies. A single network can persist for years and cover many miles. Most fruiting bodies (mushrooms) pop up, spread the spores, and then quickly die back. It would be more like pulling out hairs than cutting off fingers or killing individuals.

That justification for root vegetables is somewhat modern and has lead to further restrictions than in the past ex. ruling out peanuts. The traditional belief is that even eating onion tops that readily regrow and have no significant insect or microorganisms compared to any other leaf is still a large genocide because these vegetables hold an infinite multitude of soul.

The former is obviously easier to explain and works a bit better when you don't have a Jainist view of botany and I'd even encourage it if you aren't a vegetarian because the comparative sort of suffering minimization Just Makes Sense even coming in with a need to eat meat.

Firewalker was a good episode that was on the VHS tape that I recorded Jose Chung's... on so I watched it a lot. The fungus stalks shooting out of people's necks was a creepy effect. Another episode where many of the one-off cast would end up on TV and movie screens a lot.
