You need to test for them specifically. I would not have expected someone to get heavy metal poisoning from working with seashells, at all.

You have to tell the lab what specific things you want them to look at. The closest there is to a normal test would be a complete blood count, which is largely counting white and red blood cells and platelets, and a complete metabolic panel, which is a readout of blood sugar, electrolytes, and a summary of the general status of your kidneys and liver. So you kind of have to already know what you're looking for when you order labs.
