All the local "baking" phenomena I've see in area food blogs and local news are people who set up a grey kitchen (or whatever its called for cooking in your home) and have been baking and selling for years before word gets out about this amazing insanely good baked item.

i know the OP says that the commercial building was defunct, but do you know why whatever the last business was in that building failed? this might be good information to know to avoid making similar mistakes, whatever those might have been.

OP, I apprenticed at a family-owned bakery that did all the good stuff you want to do, like bread shares and union wages. They had to let me go after a month because there wasn't enough work for me, the two owners, and their single part-time employee. They helped me find and secure a new apprenticeship before cutting me loose, which was very respectful and kind. Just something to think about for hiring

Literally every single time, I just think of something new the OP hasn't considered

The one cool outcome to this would be if they fail so spectacularly that they get a shorthand moniker that everyone instantly recognizes without context, like the zipline goon or hotdog man. I don't think there's been a donut guy we can all name to instantly laugh at yet.

If true, you actually got an 80% discount so legit good job. Have you priced in wear and tear? Is it in good shape? The bowl itself costs as much as your entire purchase price, as an example.

I just filled a big uhaul with poo poo from a failed pizzatitty place and hauled it home in the dark. My old wrestling buddy helped me pack it and unpack it and also drink beers. We paid 5100 out the door for msrp totalling 62000. Got two coolers, a four-tap kegerator, two fryers, the mixer, two refrigerated prep tables, a three-bay sink, three hand sinks, 44 chairs, I forget how many tables, a bunch of pans, a speedrack, like 200 shot glasses, a pizza peel, a bunch of stage lights, booths, blah blah blah

Got the mixer and figured I better get a truckload and it took a few tries to shut the door.

To get the power on I have to show plans with the specific equipment I’ll be using so it’s cool to have bought a big chunk of it.

The shot glasses could maybe serve espresso. The chairs were like $1.25. The stage lighting was like $10.

My little nephew has a brewery so I bud on it thinking maybe he’d like to have it but when I told him about it he left me on read lol.

Pretty sure I paid as much as four new tap handles would cost. It’s in relatively rough shape but we’re gonna see how spiffy it gets. Maybe I flip it to a frat house and maybe I just have ballin rear end parties at my house.
