Colombia is an underappreciated source of Anti-Food Porn. Take ceviche, for example. When you hear that word you probably think of the absolutely delicious Peruvian or Mexican forms of ceviche, maybe even the soupier Ecuadorian version, but the key point of all of these is that the seafood is raw and the acidity from the citrus in the marinade "cooks" it. You're probably not thinking of fully cooked shrimp served in a sauce made from mayo and ketchup with a side of saltine crackers. You may not be thinking of that, but Colombia sure is.

Bread cheese is becoming more available in the US now. I first learned of it from a Hello Fresh meal kit a few years ago, but I’ve been seeing it pop up in the local grocery stores but it’s called baked cheese:

Dried/chipped beef is kind of funny, just because once upon a time it was the cheap poo poo you got because getting fresh beef shipped was hard and expensive, but now refrigerated trucks make fresh beef, well not cheap right now, but cheaper and dried beef is an expensive niche product.

The trick to making them look presentable is to roll them in something at the end, chopped pecans or walnuts, smoked paprika, curry powder, something like that.
