OP: if I waved a magic wand and your donuts shop was fully built out, fully permitted, had an ingredient surplus bought for weeks, all the equipment tested and working, and it was all done with zero dollars out of your pocket … i still have total confidence it’ll ultimately fail spectacularly.

If it was near a college and the space was appropriate I'd love to swing for the all-hours study crew but very few locations can manage that.

I once had an idea to open a coffee shop. Not even joking. Then, when I thought about it a while, I realized what I actually wanted was to go to a coffee shop. So instead of spending $75K and countless hours of my time, I took a chilly autumn vacation day and sat around a quiet cafe with a book, tea and sweets. It cost me like $15 for six hours of wonderful relaxing time, and I didn't have to serve any customers!

I do legit like baking. I would do a super small shop of high-end desserts open maybe about 4 pm to midnight or later. It would have to be a high-traffic area like the Village; the goal is you have a fancy dinner date, then walk around together, then come to my place to get dessert. Or you go clubbing/bar-hopping and then buy something decadent from me before the subway home. High-volume stuff isn't nearly as fun, so my goal would be smaller batches, seasonal, changing more often. It would take a shitload of money (see: location) and probably fail unless it got a ton of buzz. It might be pretty fun, though. Otoh I make more money from my day job so I wouldn't actually do that, even in the beforetimes, even if a fairy godmother gave me startup money. Awhile back I was thinking about offering myself as an outside pastry chef to a local restaurant that had an amazing menu but minimal/crappy desserts. I could have come in on Sunday and churned out enough for the week so that they would just have to reheat or plate before serving. It would have been risk-free on my end, and I'd have made nonzero money if I had talked them into some kind of commission on desserts, since they were selling none before. It would have been interesting, but I decided against asking because I hate getting up early and didn't want to give up my weekends.

OP something came up in the oregon thread and I'm wondering if you've considered the possibility of making your place a gentlemanne's cabaret donut & coffee shop to really drive in the traffic? It seems like you need more of a gimmick to really get people interested than just "guy who has never made coffee or donuts, has no business or entrepreneurial experience, and ignores virtually all the advice he asks for, please come buy my stuff" So like, have you considered slinging 'spresso in a speedo?

Instead of spending $20k on a bunch of used equipment you have no idea the condition of and would have to pay a premium to repair since you aren't the original owner and it's not under warranty, you could just buy the really important stuff new and not worry about literally every problem that comes will buying heavy duty use equipment second hand.
