People are overthinking this. Magneto not being a frail withered husk of a 100 year old isn't a problem in the MCU where we've already seen characters like Carol Danvers get powers and just straight up stop aging. All the comic stuff where they de-aged him multiple times can be skipped over, just "powers awakened, aged slowly, done".
