I guess I've watched enough weird food videos that YouTube has caught on. This video about hairy tofu showed up on my home page: https://www.youtube.com/watch?v=YSU9ZFd0lhc I wondered about the inclusion of a little rice in the soybeans at the initial soymilk-making stage. Is that to feed the fungus, or is it standard? It's new to me.

Previous to fully understanding how yeast worked people would add all kinds of things to fermented recipes in the belief they were essential to the process. Speaking of crab does anyone else like their snow crab legs with extra crab seasoning? Although unattractive to the eye, any such egg cases observed on cooked crabs pose no known public health risks to consumers and do not affect the health, quality, or taste of the crab meat.

Props to my local health department for checking it out quickly. They said they'd visited, found one inflated packet but it didn't smell fermented inside. The owner said some come inflated but don't seem to inflate later. They concluded it was probably variation. It is possible the burst packet I looked at was somehow contaminated after being breached. But I am not so sure as another one I'd set aside has also burst as of this morning and smells very fermented. Edit: got another call, apparently they opened a new box and found more inflated ones.
