I wondered about the inclusion of a little rice in the soybeans at the initial soymilk-making stage. Is that to feed the fungus, or is it standard? It's new to me.

There’s a similar christmas variation on that called kapustnica, it’s basically the same thing except with prunes and mushrooms added. It sounds weird but the prunes give it a good sweetness that really rounds out all the warm spices, solid 10/10 winter time soup

Hell yeah man, nice pictures. As mentioned by others, it definitely looks like budding yeast. Not sure what the big spiral is, most bacteria are smaller than yeast.

Hairy Tofu doesn't seem to need any kind of inoculation, so its probably not koji rice or whatever their equivalent would be.

Its possibly one of those things you just add now days because of tradition. Previous to fully understanding how yeast worked people would add all kinds of things to fermented recipes in the belief they were essential to the process. Could be some thing the older people still do for "reasons"

Props to my local health department for checking it out quickly. They said they'd visited, found one inflated packet but it didn't smell fermented inside. The owner said some come inflated but don't seem to inflate later. They concluded it was probably variation.
It is possible the burst packet I looked at was somehow contaminated after being breached. But I am not so sure as another one I'd set aside has also burst as of this morning and smells very fermented.
Edit: got another call, apparently they opened a new box and found more inflated ones. They are following up and investigating more.
