I’ve been making vegan pancakes that are just soy milk, flour and baking powder. My brother, who is a professional chef, has been trying to achieve the same fluffiness and crispness using folded egg whites and what not, he never got even close. I think I use the recipe that is literally the first google result for “vegan pancakes”.

Crumpets are completely different from what I would consider an English Muffin. They're like an edible sponge, full of holes, kind of rubbery when untoasted, but they get a bit of a crispy outside while staying sort of spongey inside? You can spread whatever on top of them when they're warm and it gets absorbed into the holes and permeates the crumpet. English Muffins are a sort of dusty bread that gets a bit hard outside after you toast them and when split in half they have a textured surface that holds onto spreads. They're just sort of fine, whereas crumpets are amazing.

Ranch is fine as a salad dressing, but yeah I'd pretty much always rather have bleu cheese. It makes a pretty good veggie dip too I guess. Any other use of it as a topping or condiment is disgusting.
