I feel like this guy started his project a long time ago with less options for mapmaking tools, and now it's just stuck like that. Possibly there have been significant linguistic changes in the intervening years even. Although given how any part of the map has to be denoting 2-4 phoneme tendencies at once, I'm not sure how you do depict that cleanly. And then he puts all his notes on the map itself, making it more messy, and no less than 10 cutouts to depict things that didn't fit or zoomed-in areas (including a zoom-in on a zoom-in in Maryland).

It's usually a better idea to devote a linguistic map to one particular feature (e.g. the word for 'ladybird' across several dialect groups) and even then it sometimes ends up looking incredibly messy. Fake edit: have a map of the word the Dutch dialects of Belgium use for 'barb wire'.
