One of the restaurants I miss most from back home was a German place that was centered around like 15 types of sausages, a bunch of which I'd never tried before. That was the only place I've had red cabbage sauerkraut and yeah, it's really good. Of course they opened only a year or so before I moved across the country

The red sauerkraut & dumps thing actually looks pretty good but in actual kraut eating countries you'd pair a thicker, fatty but still fine ground sausage as those frank looking guys don't have the BASS to balance out the flavor profile of that kraut.
