I thought eating raw potatoes was unsafe because of some type of toxin, but after looking it up, apparently that's after they start turning green or sprouting, and you shouldn't cook them at that point either. I don't think many people eat them by then anyway, but good to know.

on the raw root vegetable scale the texture is imo better than whole radish or too thick kohlrabi, worse than carrots. flavor is, if you can believe it, potatoey
